EAT | Easy Banana Nut Muffins

Hey everyone! Hope you are having a good week! Muffins are my way of getting to eat cake for breakfast and have it be acceptable. Lol. Who doesn’t like eating cake for breakfast? I love any type of muffins, but banana nut muffins are my favorite.

I thought I would share one of my favorite breakfast recipes with you all today. These are my easy banana walnut muffins that I love to make for my family. My daughter LOVES these and also likes to help me make them. Hope you enjoy!

What you need:

1 cup of sugar
1 3/4 cup of flour
1/3 cup of shortening
2 eggs
1 cup mashed bananas (2 bananas)
1/4 cup of milk
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 cup chopped walnuts
12 baking cups

Preheat oven to 325. Combine the shortening, sugar, eggs, milk, and bananas into a mixing bowl and mix on low until everything is combined together. The batter will be lumpy because of the bananas. Fold in the flour, baking soda, baking powder, salt, and chopped walnuts. Spoon batter into baking cups and bake for 15-20 minutes or until the tops are brown.

I like to eat these cold, but they are also really good right out of the oven with warm tea or coffee. You can substitute any other types of nuts you like; my husband likes walnuts so that is what I use.
