EAT | Dr. Pepper Cake

Dr. Pepper is my husband’s favorite drink, so I had to make him a Dr. Pepper infused cake for his 36th birthday!  He loved it.  The Dr. Pepper makes the cake moist, flavorful, and the cocoa adds rich chocolate-y goodness!  And the best part is, it’s all from scratch!  They’ll be impressed 🙂 Let’s get started.

What you’ll need:

  • 1 cup (2 sticks) butter
  • 1 cup Dr Pepper
  • 4 tbsp cocoa
  • 1 1/2 tsp cinnamon
  • 3 cups flour
  • 2 cups sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup buttermilk
  • 1 tsp baking soda

For the icing:

  • 1/4 cup butter
  • 1/4 cup Dr Pepper
  • 3 tbsp cocoa
  • 16 oz powdered sugar
  • 1 tsp vanilla
  • 1 cup nuts (I used walnuts; you can use any kind your little heart desires)

1.  Preheat oven to 350 degrees.  Heat Dr. Pepper and butter in a saucepan (do not boil) until melted. Set aside.  

2.  Stir together flour, sugar, cinnamon, salt, and cocoa.  

3.  In separate bowl, combine eggs, buttermilk, vanilla, and baking soda.

 
4.  Add hot Dr. Pepper mixture to flour mixture, and stir in egg mixture.  Blend.  

5.  Pour into greased and floured sheet cake pan.  Bake for 25 minutes, or until toothpick inserted into center of cake comes out clean.   

 

For Icing:

1.  Heat butter, cocoa, and Dr. Pepper until melted.  

 
2.  Remove from heat and stir in powdered sugar, vanilla, and nuts.  

 

  
Ta-da!  It’s so good, and so rich.  It tastes really similar to a German chocolate cake.
