Today we are making up some comfort food! We are going to be making a delicious and easy chicken casserole made with rice, cheese, and crackers. The Ritz crackers really make the dish good with their buttery flavor and nice crunch. Time to treat yo self!
What you need:
- 1 cup diced chicken
- 1 can cream of chicken
- 1 1/2 c cooked white rice
- 1 cup shredded cheese
- 1 sleeve of Ritz crackers
- 1 pad of butter
Preheat your oven to 350 degrees. Take a pad of butter and grease your pan. I am using an 8×8 glass pan. Don’t be stingy with the butter 🙂
Dice up a chicken breast and sauté till brown.
In a mixing bowl, combine cream of chicken, one cup of shredded cheddar cheese, and diced chicken.
Evenly spread your cooked rice into the pan over the butter.
Spread chicken mixture over the top of the rice.
Crush up a sleeve of Ritz crackers (this is the fun part) and spread over the top.
Place in oven and cook 25-30 minutes or until the crackers are browned.
My girls love to eat this for dinner, and it makes enough for my husband to take leftovers the next day! If you have a bigger family, simply double the recipe, use a 9×11 baking dish, and it comes out perfect.
