EAT | Fried Rice

Should I just go ahead and change the name of this blog to Amy’s Food Diary?  Haha.  Let’s just stick to “Food Friday”.  🙂

Today’s recipe is for fried rice, which is one of my favorite dishes.  This is a quick recipe and tastes just like the kind you get from a restaurant!  You can leave the egg out and the recipe is vegan, or you can add chicken or pork to it if you like that.  Let’s get started!

What you need:

  • 3 cups cooked white rice, cold (the recipe tastes better when you prepare the rice ahead of time and keep in the fridge)
  • 2 tbsp sesame oil
  • 1 cup frozen peas and carrots (thawed)
  • 1 tbsp onion powder
  • 2 tsp minced garlic
  • 2 eggs, beaten
  • 2 tbsp soy sauce

Heat oil over medium heat.  
Add peas and carrots, onion powder, and garlic.  Stir fry until tender.  Lower heat to medium low, and push the mixture off to one side.  Scramble the eggs on the other side. Add in your cooked rice and soy sauce and blend well. Enjoy!
