Hello! Welcome to FOOD WEEK here on the blog! In addition to makeup and beauty products, I also love cooking and creating my own recipes, so I thought I’d share some faves with you all. This week, I’ll be posting a new recipe every day, so stay tuned!
I’ve already posted my shake and bake potato wedges, but I just have to share another potato recipe with you! These are “pink potatoes” and they are my 2 1/2 year old daughter Ashley’s favorite! She eats these so fast, and is always asking for me to make them! They are so easy and delicious. Let’s get started.
What you’ll need:
- 4 red potatoes
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tbsp dried parsley
- 1/2 tsp dried basil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Wash up your potatoes and cut them up into bite size pieces.
Place them in a microwave safe bowl, and microwave them for about 5 minutes, stirring them every minute or so. This makes them cook up faster.
Melt your butter in a skillet, and add the potatoes.
Once the potatoes are coated in butter, add your seasonings.
Cook them until they are brown and crispy (about 20 minutes)
Serve! Super easy and delicious. Ashley’s going to eat them all!
