One of my favorite types of food to eat is Chinese food. In addition to fried rice, I am a huge fan of all of the chicken dishes. I LOVE to order lettuce wraps, because they are so delicious and pretty healthy! Since I don’t live close to a Chinese restaurant, I like to make my own! Here is my recipe that is just as good as the restaurant kind.
What you’ll need:
- 2 tbsp veg oil
- 2 diced chicken breasts
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cloves garlic, chopped
- about 1 inch of chopped ginger root (equivalent to 1/2 tbsp)
- the zest of one orange
- 1/2 red pepper, diced
- 3 chopped scallions
- 2 tbsp hoisin sauce
- iceburg lettuce
Heat oil in skillet, add chicken and sauté.
When browned, add salt, pepper, garlic, and ginger.
Add orange zest, bell pepper, and scallions, and stir.
Add hoisin sauce to coat the mixture, and stir.
Serve with iceburg lettuce cups.
