EAT | Quick and Easy “Taco Rice”

Hello!  Have you ever just put a bunch of ingredients together and made something that just works?  Well, here is my go-to easy “Taco Rice” recipe that I have been making for years now.  It’s kind of like a southwestern inspired chicken and rice.  I hope you enjoy!

What you’ll need:

  • 2 chicken breasts, diced
  • 1 can rotel 
  • 3 cups chicken or vegetable broth
  • 1 tsp salt
  • 1 tsp cumin
  • 1 cup frozen corn
  • 2 cups instant rice
  • Shredded cheese
  • Tortilla strips

First off, sauté your chicken.


When chicken is done, add your rotel and chicken broth.  I always blend up the rotel so it has a salsa consistency.  Add salt and cumin.


Boil this, and then add in your corn.

After boiling for a few minutes, add in your rice.  Give it a good stir and make sure all of the rice is coated.


Sprinkle cheese on top and cover.  


Turn off the heat and let sit for 20 minutes.


Garnish with tortilla strips and serve!


The corn gives it a nice sweetness while the strips add a crunch to it!
