So, being a stay at home mom with kids in school (they abandoned me), I often find myself eating lunch alone. I’m not going to make a big meal just for me, so I’m always looking for quick ideas. On the rare occasion that I get tired of eating a sandwich (I’m the sandwich queen), I love to make myself a little personal pizza. These little thin and crispy pizzas are under 200 calories, and are SO GOOD. The key is having a good sauce, and I always use Rao’s. It’s the best. Here’s how to make it!
What you need:
- 1 tsp olive oil
- Flour tortilla
- Pizza sauce
- Mozzarella cheese
- Oregano
In a skillet, heat just a teaspoon of olive oil, and crisp up your tortilla. You want to get it really crispy (almost burnt) on both sides.
After it’s really crispy, spread some pizza sauce on it, and make sure you go all the way to the edges, so the tortilla doesn’t burn. Don’t go really heavy on the sauce, or else it won’t be crispy.
Sprinkle on some mozzarella and then top with some oregano.
Bake on a cookie sheet for about 7-8 minutes on 400 degrees.
Voila! A delicious little crispy pizza!
