Today I am sharing my recipe for these special little chocolate cakes that are perfect for a dinner party, a date night at home, or just if you feel like making something special for dessert.
These are my mini chocolate ganache cakes, they are so simple and quick to make, and you probably already have all of the ingredients in your pantry. You don’t even have get out your big mixer for this, a spoon will do just fine.
These are great when you want chocolate cake, but don’t want to make a whole big cake. This recipe makes two mini cakes.
These are so decadent and fudgy, and are topped with a rich chocolate ganache.
Here’s how you make them!
What you need:
For the cakes:
- 1 egg
- 3 tbsp milk
- 3 tbsp vegetable oil
- 4 tbsp sugar
- 4 tbsp flour
- 3 tbsp cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
For the ganache:
- 1 1/2 tbsp butter
- 1 tbsp milk
- 1/4 cup chopped chocolate (any kind)
Preheat oven to 350 degrees.
Combine all of the wet ingredients (egg, milk, oil) into a small bowl and mix together.
Add the rest of the ingredients, and mix up well.
That’s it, we’re all done with the batter! Easy, huh?
Next, we are going to divide the batter into two greased 6 oz ramekins, and place on a baking sheet.
Bake these for about 30 minutes, or until a toothpick inserted comes out clean.
Let these cool for 5-10 minutes, and then remove them from the ramekins onto your serving plate.
I like to remove them to serve, but you could leave them in and pour the icing overtop. Whichever you prefer.
I leveled the tops and then served them upside down. I think it gives a clean and fancy look!
Now it’s time to make the ganache!
Combine the butter, milk, and chopped chocolate into a small bowl, and microwave and stir in ten second increments until everything is melted. Be careful not to burn it. You can use any type of chocolate you want for this! I am using milk chocolate today.
After melted, pour over your cakes and smooth out with a spoon.
I like to add some chocolate shavings over top!
Ta-da! How good do these look?! I would recommend popping them into the microwave before serving if you aren’t planning to serve them right away. They are best served warm.
