It’s Friday!!! Friday is so much more exciting to me now that my girls are in school. No waiting in drop off/pick up lines and no tennis practice on the weekend, whoo hoo!!! I also just really love when my girls are home with me. I look forward to the weekends now.
Today I am sharing a super quick and easy little dessert. If you have ever been to Disneyworld, chances are you have tried Dole Whip. Dole Whip is a pineapple dessert that is basically just pineapple soft serve. They now make it in a bunch of flavors, but my favorite is the classic pineapple. It is such a delicious cold and creamy treat, perfect for a hot summer day!
Here’s how we make it at home! (And pretend we are at Aloha Isle in Magic Kingdom) 🙂
What you need:

• 2 cups frozen pineapple chunks
• 2 large scoops of vanilla ice cream
• 4 oz pineapple juice

Just throw all of this into a blender and mix it up! I use this little personal size Ninja Blender for EVERYTHING!!!


Spoon it into little cups, and serve! This makes two small servings. My girls absolutely love this. It has the sweet vanilla flavor of the ice cream with the tartness of the pineapple. It is so good!
