EAT | Chocolate Coconut Macaroon Cookies

I’ve got a sweet treat for you today!  I’m making my delicious chocolate coconut cookies – and guess what? They are so simple and easy to make, and everyone will think you spent a lot of time making them!  Let’s get started.

Here’s what you need.

  • 2 2/3 cups shredded coconut
  • 2/3 cup sugar
  • 1/3 cup flour
  • 1/4 tsp salt
  • 4 egg whites
  • 1/2 tsp almond extract
  • 2 oz semisweet chocolate chips

Preheat oven to 325 degrees. In a mixing bowl, combine coconut, sugar, flour, and salt.

Stir in egg whites and almond extract.

Spoon onto cookie sheet lined with parchment paper (SO MUCH EASIER) and bake for about 15 minutes or until browned.

Heat the chocolate chips until they are melted, and drizzle over the tops of warm cookies.
This makes about 3 dozen cookies – so plenty to share!

Hope you liked this sweet treat, and thanks for reading my blog!

EAT | Crockpot Chicken Tacos

You guys like tacos?  If you do, then you will LOVE these chicken tacos that you can make in (my BFF) the CROCKPOT.  This is the easiest, tastiest recipe – and your whole family will love it.  Let’s get started.

You will need:

  •  A crockpot (obvi).  I am using my small crockpot today.
  •  2 Chicken breasts (I am just using one because it is a gigantic one -but it’s equal to 2 normal sized ones)
  • 16 oz of salsa (I use mild for my girls)
  •  1 tbsp taco seasoning
  • 1/2 tbsp cumin

Put your chicken into the crockpot.  In a small bowl, mix up the salsa, taco seasoning, and cumin, and dump it over the chicken.

Put the lid on the crockpot and plug it in.  Let it go for 4-6 hrs, depending on if your chicken breasts are frozen or not.  In just a few hours your house will start smelling SO GOOD, the juices will be flowin’, and the chicken will start getting really tender.

After about 6 hours, you will be able to shred the chicken with a fork.

I like to use corn tortillas for these tacos, and garnish them with cheese and lettuce.  I like tomatoes and guacamole on them too, but this is all I had in the fridge 🙂

Hope you guys liked this recipe!  Let me know if you try it out!

And thank you to my sweet friend Sunnie for the recipe 🙂

EAT | Pasta Pomodoro

Hey guys!  My family loves pasta, and I’d say this dish and meatballs are some of their favorites!  This is a light pasta dish, super healthy, and uses delicious fresh ingredients!

Let’s get started.

You will need:

•Any kind of pasta – I really like using linguine noodles.

•basil

•tomatoes – I like using small cherry.

•garlic – 3 or 4 cloves, depending on how much you like garlic.

•mozzarella – fresh or shredded

•salt and pepper

1.  Boil your pasta.

2.   In a frying pan, heat up about 3 tablespoons of olive oil over medium heat.

3.  After the oil gets hot, chop your garlic and put it in.

4.  While that heats up, start chopping your tomatoes.  I cut mine into half or into thirds.  Put those in along with a teaspoon of salt, and a half a teaspoon of pepper.

5.  Give them a good stir, and when they start getting soft, start smashing them down with a fork.  The salt will help them to break down.  Keep smashing until you have a chunky sauce.

6.  Add your pasta and your basil.

I like to add some mozzarella on top, but the best thing about this recipe is that you can add anything you like to it!  You can add red pepper flakes to make it a little spicy, or any kind of veggies or meat that you like.  I like to add grilled chicken to it.  My two daughters (ages 1 and 4) BOTH love this.  They love any kind of pasta, though.  It must be the Italian in them!

I hope you enjoyed this recipe!  See you tomorrow with a new post 🙂

EAT | Easy Breakfast Casserole Recipe

I don’t know about y’all, but I love breakfast, and I love to eat breakfast food any time of the day.  Today, I thought I would share a really good recipe with y’all – a quick and easy breakfast casserole using just a few ingredients.  Everyone I have made this for has absolutely loved it, even my two girls, 3 and 10 months.  I guarantee if you make this for your family, everyone will love it!

Here’s what you need.

Do you like my cupcake salt and pepper shakers?

  • 1 lb ground sausage (you can use any kind of ground sausage, and even small pieces of cooked bacon will work)
  • 1 roll of Pillsbury Crescent Rolls (biscuit dough works too)
  • 5 eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper

Brown up your sausage in a skillet.  Drain on paper towels and set aside.

Unroll Crescent Rolls, and spread dough onto 9″11 baking dish.  Spread sausage and half of the shredded cheese over the top.

In a bowl, combine eggs, milk, oregano, salt, and pepper.  Stir until everything is combined, and then pour into baking dish.

Add remaining cheese over top.

Bake at 350 degrees for 20-30 minutes or until edges of crescent rolls are brown and cheese is melted.

All finished!

The eggs don’t come out runny, and the sides and bottom are nice and crispy.

Hope you guys liked this recipe, and let me know if you try it out!

My Favorite “Healthy” Night Snacks

Well, I guess you’re getting two posts today instead of just one.  I totally forgot I had this post scheduled for upload today. Enjoy! 🙂

Before I begin this post, let me just say that cupcakes, chips, and ice cream are my favorite snacks, ok?  A Snickers bar is a snack.  An apple?  Not a snack. A punishment. LOL…I’m just kidding.  I actually really love eating fruit for a snack.  But, eating these bad snacks every night is not good – so I have been trying to choose healthier options for myself when digging for a snack.

I have received a couple of questions and requests on how I lost my baby weight and what I eat to maintain my weight, so I thought I would share.  What has worked for me is portion control and not eating (a lot) late at night.  I try to stick to 100 calories or less after 6 pm.

So while my husband eats his 8 Oreos at night next to me on the couch (the man does not gain weight) I resist the urge to say yes when he asks me if I want one, and try to find something healthier.  He doesn’t have to wear a swimsuit. Haha.

Be strong.

Here are some better options.

So first I’ll start off with these La Croix “sodas”.  I call them “soda” to make myself happy.  I love soda, but it is ridiculously bad for you.  These are delicious and I am totally addicted.  My friend Caty got me hooked when I had the lemon one at her house!  The lemon, lime, and grapefruit are my favorite flavors.  So what makes these “sodas” so great is that they are just carbonated water, and natural flavoring.  Nothing else.  No calories, no artificial sugar, nothing.  It tastes as if you took some bubbly water, and squirted some fruit in there.  That’s all it is.  So, it tastes like a treat, but it’s really a lot better than having a soda.

So another thing I like to eat are bars.  I like LUNA and Kind bars, and also these Fiber One bars help you feel full. These three kinds are actually really good (not TWIX bar good tho) and they satisfy my urge for a candy bar.  I know they do contain sugar and calories, but they are a healthier option.

Does anyone love popcorn as much as me?  I eat so much popcorn!  I love Skinny Pop, and also these 100 calorie packs of popcorn.  I mean, do I really need to eat an entire big bag of popcorn? No.  These little packs give me my popcorn fix.

I also like to eat some yogurt with granola, and sometimes I even eat one of my daughters squeezie fruit pouches.  This mixed berry kind is so good and tastes like berry Skittles.

Ok, so these are my healthier snack options!  What do you like to snack on?

Thanks for reading! xx
