MOMMY Monday: Kid Approved Smoothie Recipe

Hi guys! Sometimes when we are in a hurry getting to a playdate or appointment, we eat breakfast in the car. Lol. My favorite thing to make my daughter when we are rushing around and trying to get out the door is a smoothie. Smoothies are great because they are really good for you, and they taste delicious. Today I am going to share with you the recipe for my daughter’s favorite smoothie that I make for her. It is a super simple and easy recipe that I’m sure your kids would love too!

What you need:


1 banana chopped up
4 halved strawberries
Handful of blueberries
1 cup orange juice
1/2 cup ice

Just throw everything into the blender and blend it up! So quick and easy.

I chopped up the fruit and put it into the freezer for about 4 hours before I made this, but you can buy the fruit already frozen if you want to.

I use orange juice instead of water or milk because it makes it taste sweeter and I like the citrus flavor.

The blender that I use for these is a single serve blender, just because I don’t want to use the big blender just for one smoothie. This blender is really cool because the cup is actually a travel mug that you can grab and take with you.

EAT | Easy Banana Nut Muffins

Hey everyone! Hope you are having a good week! Muffins are my way of getting to eat cake for breakfast and have it be acceptable. Lol. Who doesn’t like eating cake for breakfast? I love any type of muffins, but banana nut muffins are my favorite.

I thought I would share one of my favorite breakfast recipes with you all today. These are my easy banana walnut muffins that I love to make for my family. My daughter LOVES these and also likes to help me make them. Hope you enjoy!

What you need:


1 cup of sugar
1 3/4 cup of flour
1/3 cup of shortening
2 eggs
1 cup mashed bananas (2 bananas)
1/4 cup of milk
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 cup chopped walnuts
12 baking cups

Preheat oven to 325. Combine the shortening, sugar, eggs, milk, and bananas into a mixing bowl and mix on low until everything is combined together. The batter will be lumpy because of the bananas. Fold in the flour, baking soda, baking powder, salt, and chopped walnuts. Spoon batter into baking cups and bake for 15-20 minutes or until the tops are brown.


I like to eat these cold, but they are also really good right out of the oven with warm tea or coffee. You can substitute any other types of nuts you like; my husband likes walnuts so that is what I use.

Valentine’s Day Treat : White Chocolate Strawberry Heart Cookies

Hi everyone! Hope you are having a wonderful week. Today I am going to share a cookie recipe with you all that is so yummy and easy to make! My best friend April made these cookies for me for my bridal shower all those years ago, and I had to get the recipe from her to share with all of you! This is a great recipe to make if you have kids also; Allie had so much fun helping me cut these out into heart shapes.


What you need:

-1 box of strawberry flavored cake mix
-2 eggs
-1/2 cup (1 stick) butter
-1 cup white chocolate chips
-flour and cookie cutter


1. Soften the butter in a microwaveable bowl.
2. Add the eggs to the butter and stir together.
3. Slowly add cake mix while stirring; make sure you get all of the lumps out.
4. Add the white chocolate chips in and stir all together.
5. Put some flour down and put the mixture on top. Flour your hands and start flattening it out. Take your cookie cutter and cut out as many hearts as you can.
6. Place on cookie sheet and bake at 325 degrees for 8-10 min.

This recipe will make about 50 cookies!

What’s on The Menu: Amy’s Apple Pie

Hey guys! I’ve got a special treat for you today! My recipe for my homemade apple pie! Since it is starting to feel a little cooler outside, I felt like I should celebrate with one of my favorite fall desserts. Also, this pie makes your house smell sooo good. So, here we go…my homemade apple pie !


– 6 Granny Smith apples
– 3 refrigerated pie crusts (I use Pillsbury)–They come in packs of 2, so you will have one leftover that you can freeze.
– 1 tbsp lemon juice
– 3/4 c sugar
– 1 tbsp flour
– 1/2 tsp cinnamon
– 1/4 tsp nutmeg
– 1/8 tsp salt
– cinnamon/sugar for sprinkling

1. Core, peel, and slice the apples into thin slices. Mix in lemon juice.
2. Combine sugar, flour, cinnamon, nutmeg, and salt, and stir together.
3. Add this mixture slowly to the apples, and make sure you coat all of the apples.

4. Place the apples in a strainer over a bowl; this will release the juices. Keep in the strainer for about 25 minutes. After all of the juices have drained, you can throw away the extra juice, or my husband gave me the idea of saving it to put over ice cream. (YUM)

5. Unroll one of the pie crusts and place it into your pie pan, and then put the apples in.

6. You can just use the other pie crust and place it on top, but I like to do my apple pie with a basket weave pattern. Unroll the pie crust and cut into 1 inch strips. (it doesn’t have to be perfect)
7. Place the strips vertically over the pie crust.

8. Take the last pie crust and cut into one inch strips, and then start making your basket weave pattern. The best way that I can explain this is to just fold every other strip back, and then place the strip down, and then repeat the process until you have all of the strips down.



9. After you are finished making the basket weave pattern, go around the edges of the pie and trim off any excess pie crust that is hanging over the pie pan. Then, what I like to do is grab a fork and press down the edges, I think it gives a definite crust look to the pie! I also like to sprinkle some cinnamon sugar over the top.

10. Bake at 400 degrees for 30-35 minutes. If you notice that the edges are getting browned, cover them with some foil.


And that is it! Let the pie sit for about 30 minutes before serving. It is a very easy pie to make, and everyone will love it!

My Dearest Twinkie,

I have loved you all my life. When I was a little girl, you were always there for me. Picnics, school lunches, afternoon snacks, you were always there to bring a smile to my face.

I was lonely; lost without you, dear twinkie…and I missed you. My life just wasn’t complete without you. I knew someone would buy you, and everything would be ok again, but I couldn’t help but miss you.

Today, when I saw you, the last one on the shelf at Albertson’s, sitting all by your lonesome…I knew you’d be mine again. When I opened the box and saw you, I was so happy. We are meant to be together, twinkie. I know you feel the same way, and I promise to never take you for granted again, twinkie. You are just as delicious as you once were. I love you, dear twinkie.
